Happy New Year with Spicy Chicken Curry

Hi! I don't upload any cooking easy recipes for a long time. I went to travel many places. I have new menus to share with you. If you like Thai food, I'm sure that you will like them. First, I would like to start with Spicy Chicken Curry. It's a very delicious dish and famous in Thai restaurant too. Actually I love it so much. Please check it out.

Ingredients for Spicy Chicken Curry

  • Chicken 150g.
  • Curry 1 tablespoon
  • Cow-Pea 15g.
  • Goat Pepper 3
  • Kaffir Lime Leaves cut in small pieces 4 leaves
  • Chop Garlic 1 head
  • Soy Sauce 1 tablespoon
  • Sugar 2 teaspoon

Instructions

1. Heat the pan in medium and then fry garlic until it smells good. After that you should put chicken that you already prepared into the pan. Adding curry and a little bit pure water. Stirring all the ingredients together.
2. Adding cow-pea, soy sauce, basil and kaffir lime leaves. After that stirring and serving.

Mashed Potatoes Recipe with Corn

One of my favorite mashed potatoes recipe uses corn as an ingredient. What could be sweeter or homier or more comforting than potatoes mashed, whipped, riced, beaten- whatever word you choose- with golden nuggets of corn? The texture is creamy with a slight crunch not due to lumpy potatoes, and the flavor is subtle and addictive. Here’s a recipe to cook mashed potatoes with corn that serves 4 people:

Ingredients

· 4 medium baking potatoes (don’t use instant mashed potatoes!)

· 1/2 cup milk

· 2 ears fresh sweet corn (to make 1 cup kernels)

· 4 tablespoons butter

· Salt, freshly ground black pepper, and cayenne

Directions

1. Peel and quarter the potatoes.

2. Bring a saucepan of salted water to the boil, add the potatoes and boil them, partially covered, for 15 to 20 minutes, until the potatoes are tender.

3. While the potatoes are cooking, heat the milk in a small saucepan, add the raw corn kernels, butter, and seasonings, and heat until the butter melts.

4. When the potatoes are done, put them through a ricer or coarse strainer. Mix in the corn and milk mixture and beat until fluffy. If the potatoes are too stiff, add a little more milk.
