Mashed Sweet Potatoes

Ingredients

  • 1 1/2 lb sweet potatoes, peeled, quartered (about 5 cups)
  • 2 tablespoons Kraft Light Done Right! Zesty Italian Reduced Fat Dressing
  • 1/2 cup finely chopped onion
  • 1/2 cup Breakstone’s Reduced Fat or Knudsen Light Sour Cream
  • 1 tablespoon brown sugar

Instrutions

  1. Cook sweet potatoes in boiling water in large saucepan 10 min or until tender. Remove potatoes from saucepan; drain.
  2. Heat dressing in same saucepan on medium-high heat. Add onion; cook and stir 5 min. Reduce heat to medium.
  3. Add sweet potatoes; mash lightly. Add remaining ingredients; cook until heated through, stirring occasionally. Makes 8 servings, 1/2 cup each.

Sweet Potato Casserole

Ingredients

  • 4 medium Sweet potatoes or yams (about 2 lb)
  • 1/4 cup Packed brown sugar
  • 1/4 cup Butter
  • 1/2 teaspoon Salt
  • 1 Can (8 oz) crushed pineapple
  • 1 tablespoon Packed brown sugar
  • 1 tablespoon Butter
  • 1 teaspoon Water
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground nutmeg
  • 1 1/2 cups Miniature marshmallows
  • 1/4 cup Chopped pecans

Method

  1. Wash sweet potatoes. Prick each Two or three times with fork to allow steam to flee. Arrange in oven no less than 1 inch apart. Microwave at HIGH (100%) until fork-tender, Eight or ten minutes. Cover and let stand 5 minutes.
  2. Peel and slice potatoes. Devote 2-quart casserole. Add 1/4 cup butter as well as the salt. Mash until no lumps remain. Mix in pineapple. Microwave at HIGH (100%) 2 minutes. Stir and set aside.
  3. Place 1 tablespoon brown sugar, 1 tablespoon butter, water, cinnamon, and nutmeg in medium bowl. Microwave at HIGH (100%) until butter is melted, 1 to 1 1/2 minutes, stirring after half the time. Add marshmallows; toss to coat. Top sweet potato mixture with marshmallows. Microwave at HIGH (100 percent until the marshmallows are melted and potatoes are heated through, Two to four minutes. Sprinkle with pecans.

Mashed Potatoes With Corn

One of my favorite mashed potatoes recipe uses corn as an ingredient. What could be sweeter or homier or more comforting than potatoes mashed, whipped, riced, beaten- whatever word you choose- with golden nuggets of corn? The texture is creamy with a slight crunch not due to lumpy potatoes, and the flavor is subtle and addictive. Here’s a recipe to cook mashed potatoes with corn that serves 4 people:

Ingredients

  • 4 medium baking potatoes (don’t use instant mashed potatoes!)
  • 1/2 cup milk
  • 2 ears fresh sweet corn (to make 1 cup kernels)
  • 4 tablespoons butter
  • Salt, freshly ground black pepper, and cayenne

Directions

  1. Peel and quarter the potatoes.
  2. Bring a saucepan of salted water to the boil, add the potatoes and boil them, partially covered, for 15 to 20 minutes, until the potatoes are tender.
  3. While the potatoes are cooking, heat the milk in a small saucepan, add the raw corn kernels, butter, and seasonings, and heat until the butter melts.
  4. When the potatoes are done, put them through a ricer or coarse strainer. Mix in the corn and milk mixture and beat until fluffy. If the potatoes are too stiff, add a little more milk.

Pink Mashed Potatoes

Pink Mashed Potatoes Ingredients:

  • 4 potatoes
  • 2 cup milk (heated in the microwave)
  • 4 tablespoons butter
  • Salt and pepper
  • Red food color

Pink Mashed Potatoes Directions:

  1. Peel potatoes and cut into 10-12 pieces, put in pot, cover with water and bring to a boil.
  2. Reduce the heat, and cook for about 20 minutes, until the potatoes are tender.
  3. Turn off the stove, pour the potatoes into a colander and shake to get the water off.
  4. Out the potatoes in a bowl; with an electric mixer or hand beater, beat the potatoes, butter and a little salt and pepper, adding the milk while you mix.
  5. Add Red food color carefully until it is a pretty color.
