Ingredients

  • 1 lb. dry Pinto Beans
  • 1/2 cup finely Diced Onions
  • 1 Tbls. of Salt
  • 1 tsp. of Pepper
  • 1 Tbls. of Brown Sugar
  • 2 tsp. of Chili Powder
  • 1/2 tsp. of Garlic Powder
  • 1/4 tsp. of Celery Salt
  • 1/2 cup of Chopped Bacon

Directions

  1. Cover beans with water. Bring to a boil and then turn off heat. Soak for one hour and then drain.
  2. Add more water to cover beans and add all remaining ingredients.
  3. Cook on low to medium heat (you’ll want a low boil) for 2 to 3 hours or until beans are done to desired tenderness.

Chi Chi's Pork Tenderloin With Bourbon Sauce

Ingredients

  • 10 Ounce Can Chi Chi’s diced tomatoes and green chilies, drained
  • 1/3 cup Bourbon
  • 1/3 cup Soy sauce
  • 1/3 cup Worcestershire sauce
  • 1/2 cup Chopped onion
  • 2 Tblsp Honey
  • 2 Tblsp Dijon mustard
  • 1/4 Teaspoon Pepper
  • 2 Pound Pork tenderloin

Directions

  1. Combine all marinade ingredients in recloseable plastic food bag. Mix well.
  2. Add the pork tenderloin. Seal bag and turn several times to coat the meat.
  3. Place in refrigerator for 8 hours or overnight, turning occasionally.
  4. Preheat broiler. Remove meat from marinade; reserve marinade.
  5. Place meat on broiler pan, broil 7 to 8 inches from heat source for approximately 7 to 9 minutes on each side. In small saucepan, bring remainder of marinade to a boil; boil one minute. Serve with the meat.

Applebee's Baby Back Ribs

Ingredients

  • 3 racks (about 1 lb. each) pork baby back ribs, each cut in half

Barbecue Sauce Ingredients

  • 1 cup ketchup
  • 1/4 cup apple cider vinager
  • 3 tablespoons dark brown sugar
  • 3 tablespoons worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon salt

Directions

  1. Put ribs in a large pot with enough water to cover them. Bring water to a boil, reduce heat, cover and simmer 1 hour or until ribs are fork tender.
  2. Mix all sauce ingredients together in a medium sauce pan and bring to a boil, reduce heat and simmer uncovered, stirring often, for 30 minutes or until slightly thickened.
  3. Heat broiler. Line broiler with foil for easy cleanup. Place ribs, meat side down, on broiler pan, brush with 1/2 the sauce and broil 4−5 inches from heat source for 6 to 7 minutes. turn ribs over, brush with remaining sauce and broil 6 to 7 minutes longer or until edges are slightly charred.

Caribbean Jerk Pork Chops

Ingredients

  • 1/4 cup water
  • 1/3 cup lemon juice
  • 1/3 cup chopped onion
  • 1 tablespoon packed brown sugar
  • 1 tablespoon chopped green onion
  • 1 tablespoon canola or vegetable oil
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon pepper
  • 1/2 teaspoon ground thyme
  • 1/4 teaspoon ground red pepper (cayenne)
  • 2 1/4 pounds lean pork loin or rib chops (6 chops) — about 5/8 inch thick

Directions

  1. Place all ingredients except pork in blender. Cover and blend until smooth. Reserve 1/2 cup of the marinade; cover and refrigerate for basting. Trim excess fat from pork. Place pork in shallow nonmetal dish or heavy-duty resealable plastic bag. Pour remaining marinade over pork. Cover dish or seal bag and refrigerate at least 12 hours but no longer than 24 hours.
  2. Heat coals or gas grill. Remove pork from marinade; discard marinade. Cover and grill pork 4 to 5 inches from medium heat 8 to 11 minutes, turning frequently and brushing with reserved marinade, for medium doneness (160 degree F) or until pork is slightly pink when cut near bone. Discard any remaining basting marinade.

Ingredients

  • 3 pounds Beef rump roast
  • 3 tablespoons Flour
  • 15 ounces Tomato sauce
  • 1/2 cup Onions-chopped
  • 1/3 cup Brown sugar — packed
  • 2 tablespoons Lemon juice
  • 1 tablespoon Beef instant bouillon
  • 1 1/2 teaspoons Chili powder
  • 1 Cl Garlic — chopped fine
  • 1 teaspoon Dry mustard
  • Hamburger buns

Directions

  1. Rub flour into roast.
  2. Place in bottom of crockpot and add remaining ingredients, except buns.
  3. Cook on low for about 14-16 hours. Serve over buns.

Ingredients

  • 6 Pork Steaks OR Chops
  • 1 teaspoon Fat
  • 1 1/2 cups Ketchup
  • 1 1/2 cups Water
  • 1/4 cup Vinegar
  • 1/4 cup Worcestershire Sauce
  • 2 teaspoons Salt
  • 2 teaspoons Chili Powder
  • 2 teaspoons Paprika
  • 1 teaspoon Pepper
  • 1/2 teaspoon Accent
  • 2 large Onions — sliced very thin
  • 1 teaspoon Salt
  • 1 teaspoon Accent
  • 1/4 teaspoon Pepper

Directions

  1. Use a 5 qt. crockpot. Place fat in crockpot and melt on HIGH.
  2. Add meat and turn to coat with fat. Season meat with mixture of last 3 ingred.
  3. Add all other ingred. Cook on LOW for 8-9 hrs.
