Ham N Noodle Toss

Ingredients

  • 2 cups broccoli florets
  • 1-3/4 cups water
  • 1-1/4 cups cubed fully cooked ham
  • 1 tablespoon soy sauce
  • 2 packages (3 ounces each) oriental-flavored ramen noodles
  • sliced ripe olive, optional

Directions

  1. In a large saucepan, combine broccoli, water, ham, soy sauce and one flavoring packet from the noodles.
  2. Break noodles into small pieces; add to pan. Simmer, uncovered, for 6-8 minutes or until noodles are tender, stirring frequently.
  3. Top with olive is desired. Yield: 4 servings.

Chicken-Basil Noodles

Ingredients

  • 2 teaspoons olive or vegetable oil
  • 1 medium onion — finely chopped (1/2 cup)
  • 1 clove garlic — finely chopped
  • 3 medium tomatoes — seeded and chopped (2 1/4 cups)
  • 2 cups cubed cooked chicken or turkey breast
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon salt
  • 2 cups uncooked cholesterol-free noodles (4 ounces)

Directions

  1. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook onion and garlic in oil, stirring occasionally, until onion is tender. Stir in remaining ingredients except noodles; reduce heat to medium.
  2. Cover and cook about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft. Meanwhile, cook and drain noodles as directed on package. Serve chicken mixture over noodles.

Turkey Chow Mein Casserole Recipe

Turkey Chow Mein Casserole

Ingredients

  • 1 can condensed chicken broth — (10 3/4 oz.)
  • 1/2 cup Bisquick baking mix
  • 2 cups cut-up cooked turkey
  • 1/3 cup blanched whole almonds
  • 1 can chow mein vegetables — drained (16 oz.)
  • 1 can mushroom stems and pieces — drained (4 oz.)
  • 1 jar sliced pimientos — drained (2 oz.)
  • 1 cup chow mein noodles

Directions

  1. Heat oven to 375 degrees.
  2. Gradually stir broth into baking mix in ungreased 1 1/2 quart casserole. (Mixture will be slightly lumpy.)
  3. Stir in remaining ingredients except chow mein noodles.
  4. Bake uncovered until thick and bubbly, about 40 minutes.
  5. Sprinkle with chow mein noodles; bake uncovered 5 minutes longer.
  6. Let stand uncovered 5 minutes before serving. Makes 5 or 6 servings.

Beef Lo Mein Recipe

Ingredients

  • 4 tb Peanut oil
  • 1-1/2 lb Flank steak; or shrimp or chicken
  • 2 Celery; shredded
  • 2 Slices Ginger; minced
  • 1 c Cabbage
  • 1 Green onion; minced
  • 2 tsp Cornstarch
  • 1/2 lb Spaghetti; or Chinese/noodles
  • 1/2 tsp Sugar
  • 1 tb Soy sauce; light soy
  • 1/2 tsp Salt; optional

How to Cook

  1. Cook spaghetti as directed on package, AL DENTE, drain, rinse in cold water, add a few drops oil and mix to keep from sticking. Set aside.
  2. Slice steak VERY THIN, across the grain, 2″ pieces. Mix together, steak, ginger, scallion, cornstarch, sugar, light soy, set aside to marinate. Heat wok to smoking, add 2 tbs oil.
  3. Stir fry meat mixture two minutes, do not overcook, Reserve.
  4. Add 2 tbs oil, heat, stir fry carrots and cabbage two minutes, add spaghetti, stir well and cook a few minutes, add meat mixture, 1 tbs soy and salt.
  5. Stir a minute to heat and serve. Nice thing about stir fry cooking, just about anything goes. So, substitute, add other veggies, you just can’t go wrong..

Ramen noodles are made from dough of wheat flour, salt, and a type of alkaline water containing potassium carbonate and sodium bicarbonate. Eggs are sometimes used instead of alkaline water. Noodles are usually flat, fat, thin, and ribbon-like. They can be straight or wrinkled and they come in yellowish hue. Ramen is a typical Japanese food though it originated in China. It is usually cooked with broth or boiling liquids flavored with meat and vegetables. Toppings are usually added like pork and onions to add flavor.

One example of ramen noodles that gained popularity is yakisoba. Yakisoba means “fried noodles.” It is prepared with vegetables, bite-sized pork, carrots, cabbage, salt and pepper. It is usually served in a plate. Another way of preparing yakisoba is by piling the noodles. The piled noodles are placed on sliced bread and showered with pickles.

Instant ramen is a popular food among Orientals. Since it production, its preparation has gave birth to wide varieties of recipes ranging from fried ramen to salads, served mostly in restaurants. It has gained popularity in western countries and is now served not only with meat-based broth but with a wide range of ingredients like vegetables, nuts, and fruits.

Salads are mixtures of foods, often served with dressings with addition of meat, fish, cheese and grains. According to history, salads originated in countries like Italy and the Netherlands. The word “salad” comes from the French word “salade” which means salt in Latin. There are types of salads. These are sometimes named based on the food items mixed with the vegetables. Some of popular ones are Antipasto salad, Chef salad, chicken salad, and ham salad. Dressings come in wide varieties like vinegar, mayonnaise, lemon, or soy sauce.

Below is a simple ramen noodle salad recipe that is easy to do. This requires no heating and is ready to eat as soon as all ingredients were mixed up.
