Vegetable Rice Medley

Ingredients

  • 1 cup uncooked long grain rice
  • 2-1/4 cups water
  • 2 to 3 tablespoons onion or vegetable soup mix
  • 1/4 teaspoon salt
  • 2 cups frozen corn, peas or mixed vegetables

Directions

  1. In a saucepan, combine the rice, water, soup mix, and salt; bring to a boil. Reduce heat; cover and simmer for 15 minutes.
  2. Cook until rice and vegetables are tender. Yield: 4-6 servings.

Ambrosia Rose

Ingredients

  • 4 Grapefruit
  • 1 Pineapple
  • 1/2 c Sugar (or more to taste)
  • Nutmeg
  • 6 Oranges
  • 1 pt Strawberries
  • Shredded coconut
  • 1/2 c White or rose’ wine

Directions

  1. Dice pineapple; cut grapefruit and oranges in sections. Wash berries and remove stems; add to fruits.
  2. Add sugar and let steep for several hours in refrigerator.
  3. Before serving, add wine. Sprinkle with shredded coconut and nutmeg.

Stir-Fried Broccoli and Mushrooms

Ingredients

  • Corn Oil
  • 2 c Sliced Mushrooms
  • 1 small Onion; cut in thin wedges
  • 1/2 ts Salt
  • Clove Garlic; minced
  • 1/8 ts Pepper
  • 2 c Broccoli Florets

Method

  1. In wok or large skillet heat oil over medium-high. Add onion and garlic; stir-fry 30 seconds.
  2. Add broccoli, mushrooms, salt and pepper; stir-fry 5 minutes or until tender-crisp.

Baked Stuffed Peppers Recipe

Baked Stuffed Peppers

Ingredients

  • 1/2 c Long-grain brown rice
  • 1 x Salt
  • 4 x Large sweet peppers (Red or green peppers)
  • 3 tb Butter or margarine
  • 1 x Medium onion, chopped
  • 1/2 c Finely diced celery
  • 1/2 c Sunflower seeds
  • 1/4 c Minced parsley
  • 2 ea Eggs, slightly beaten
  • 1/4 ts Dried oregano leaves,crumble
  • 1/4 c 4 oz. chopped green chilies
  • 1 x Black pepper
  • 1/2 c Shred. sharp Cheddar cheese

Instructions

  1. Cook rice in 1-1/2 cups boiling salted water for 35 minutes or until tender. Drain if necessary. Set aside.
  2. Cut peppers in half. Remove seeds and white membrane. Parboil peppers in boiling salted water for 5 minutes. Arrange in slightly oiled, shallow
    1-1/2 quart baking dish.
  3. Melt butter in small skillet. Add onion, celery, and sunflower seeds.
  4. Saute until onion is tender.
  5. Remove from heat. Stir into rice. Add parsley, eggs,oregano, chiles, black pepper, and salt to taste. Fill peppers with mixture. Sprinkle cheese on top. Put about 1/3 cup hot water in bottom of dish.
  6. Bake at 400 degrees for about 20 minutes.
  7. Good served with: Stewed tomatoes and corn bread (bake corn bread along with peppers).

Ingradients

1-Tofu

Directions

1. Cut 1-Tofu into 1/4

2. Wrap 4×1/4-Tofu in the paper towel, then put them in the bowl.

3. Microwave at high for 3 minutes. If you like to drain more, change the paper towl to new, then put Tofu upside down in the bowl, microwave again for 3minutes.

4. Please be CAREFUL Tofu is very hot. Cool and mush before use if necessary.

Tips: You may cut drained Tofu and put them in the omlet or mush them and put them in the meatball and hamburger(Use 1/2 Tofu in the meatball/hamburger serving for 3 to 4) The meatball/hamburger come out very fluffy and they are very nutritious.(Remember, Tofu is made from Soy-bean!!)

You can microwave most of the vegetables, such as carrot, broccoli, asparagas, green beans, califlower and etc.

Directions

1. Cut vegetables at bitesize.

2. Put cut-vegetables in the casserole or microwave-safe bowl and add water(about 1/4 to 1/2 inch)

3. Wrap 2. with saran-wrap(do not wrap tightly-leave small space) and microwave at 70% power. Time will be different depending on the vegetable and their amount. Try to microwave shorter first. For 2cups(500cc) of broccoli, microwave about 3-4minutes. 4. Remove from the casserole or bowl.

Tips : The cooking time is different depending on the vegetable and its amount. Please try 2 to 3minutes at 70% power and microwave again if not cooked. The color comes out very nice by cooking in microwave. But try to take the vegetables out as soon as they are cooked. If you leave them in the bowl, they will be overcooked and color changes. When making the baked potato, punch holes with the folk and wrap it then put them in microwave before you wrap them with the aluminum foil to bake in the conventional oven.
