Elisen-Gingerbread

500g ground filberts
300g ground almonds
500g sugar
5 eggs (beat to a thick consistency)
2tsp. cinnamon
1tsp. ground cloves
125g lemon peel (buy in bulk food stores)
125g orange peel (see above)
round wafers (the kind used as host tablets; Küchle brand, available in deli stores)
to cover cookies:
chocolate glaze (Oetker brand; available in deli stores)
or icing sugar and the juice of 1 lemon
or icing sugar and rum

Cooking Elisen Gingerbread

Mix all ingredients together; lay out wafers on large cookie sheet (leave at least 1 inch space between each wafer); place one teaspoon of mixture on each wafer; bake at 300 F for 20 minutes; let cookies cool down well; use baker’s brush to cover cookies with chocolate glaze (heat up according to instructions on package) or with icing sugar and the juice of 1 lemon or icing sugar and a dash of rum (mixed with fork to a smooth consistency).

Vanilla horns

Dough:
300g     flour
125g     icing sugar
2 pck     vanilla sugar
3     egg yolks
125g     ground almonds
250g     butter or margarine (unsalted)
For sprinkling:
2 pck     vanilla sugar

How to cook Vanilla horns :
Mix together ingredients and knead well.

Chill for about 60 minutes in refrigerator.

Then form little horns (Kipferln) out of the doughs.

Bake for about 10-12 minutes at 325 F.

At last sprinkle hot Kipferln with Vanilla sugar.

Almond Macaroons

Almond Macaroons Ingredients :

3 egg white
250g ground almonds
250g icing sugar
one pinch of cinnamon
small round baking wafers (“eating papers”)
200g glaced cherries

Almond Macaroons Instructions :

Beat egg white until frothy. Mix almonds, icing sugar and cinnamon and add by the spoonful. With two teaspoons form macarons and put on baking wafers. Then decorate with glace cherries. Bake for 20-25 minutes at 275 F.

Cinnamon stars

Cinnamon Stars Ingredients :

3 egg whites
250g icing sugar
250-300g ground almonds (with skin)
1 tsp cinnamon
1 tsp rum
1 pck vanilla sugar

How to cook cinnamon stars :

Beat eggwhites until very frothy and add icing sugar.

Take half a cup of mixture and put aside for coating. Then add carefully almonds, cinnamon, rum, and vanilla sugar.

Roll out dough on countertop sprinkled with icing sugar – 1/5 inch thick (1/2 cm).

Cut cookies with star-cookie-cutter. Place star-cookies on greased baking sheet and spread with mixture put aside.

Bake or 30-40 minutes at 275 F.
